Healthy Stuffing Recipe
~ Wheat Free~

What you will need for Bread Substitute:

  • 1 tbsp. Cold Pressed Olive Oil
  • 2 cups of cooked rice
  • 1 lb. of sausage
  • 2 cups ground hazelnuts (or your favorite nuts)                               


What you will need for Stuffing:

  • 1 tablespoon cold pressed olive oil
  • 1 tablespoon butter
  • 1 1/2 cups finely chopped onion
  • 1 stalk celery, chopped
  • Salt to taste
  • 1 cup of chopped mushrooms
  • 1 teaspoon dried thyme
  • 1/3 cup fresh sage leaves finely chopped
  • 1/3 cup parsley leaves, finely chopped
  • Freshly ground black pepper to taste
  • Bread substitute (see ingredients above)
  • 1 cup of chicken broth


Bread Substitute
Heat Skillet on medium. Add 1 tblsp. Cold Pressed Olive Oil to pan. Brown the sausage and drain. Remove from heat and add 2 cups of cooked rice and 2 cups of chopped hazelnuts.

Stuffing

  • Leave oven at 350° F. Wipe loaf pan with a paper towel butter.
  • Heat oil and butter in a 3-quart saucepan over medium heat. Add onion, celery and salt and cook until vegetables are soft but not colored.
  • Stir in thyme, sage and parsley. Season with pepper.
  • Add bread substitute, stirring to coat with vegetables and herbs. Add 1 cup chicken broth.
  • Turn into the prepared loaf pan and bake until heated through - about 35 minutes.
