Cloud’s Almost Famous
Apricot Lassi

  • 1 c. whole milk yogurt- made with a room-temperature culture to preserve enzymes is best
  • 3 c. pure water
  • 1-2 T. maple syrup-less added sweetener is better for us!
  • 3-4 ripe apricots
  • Pinch of freshly ground cardamom seeds

Place all in blender and blend until smooth. A lassi is considered a digestive aid. In India, a sweet lassi is often made with mango. I substitute apricot because it is what we can grow here.

Set the pitcher in the fridge until chilled, allowing the cardamom to flavor the Lassi. This is about 4 servings.
