Coconut Soft Serve Ice Cream

This requires a Vita Mix or blender of equal power. I have given this to several people who after tasting this put the purchase of a Vita Mix at the top of ther purchases to make list.

Instructions:

  • 1 can coconut Milk (whole fat of course) frozen into cubes
  • 1/2 teaspoon vanillia extract
  • dash sea salt
  • 1/4 cup sucanut or rapadura
  • 1 cup frozen blueberries, or strawberries, or cherries, or peaches etc.
  • 1/4 cup  Ghirardelli unsweetened cocoa powder or equivalent (optional)

 
Freeze the Coconut Milk in an ice cube tray. You blend the frozen milk with all the other ingredients. The frozen ingredients make it become ice cream.  After placing all the ingredients in a blender, put it on a high speed using the too,l that comes with the blender, to force coconut cubes, fruit and flavorings together. This only takes a couple of minutes. If you blend too long, the mixture will become runny.  Do it just long enough and you have a perfect replacement for a coconut bliss ice cream type of desert. It's heavenly!!!
 
Flavorings are optional - use your imagination. What fun!!!

About the Cook:
I have worked as a teacher, in commission sales, owned my own businesses and helped my husband pastor churches.  My own health issues created an interest in nutrition that I pursued for years.  But, the NTA training gave me a solid understanding of what I already knew.  Nutrition is the answer to America's health crisis.

As a Nutritional Therapy Practitioner I am combining my love of teaching and desire to help people with my enthusiasm for nutrition.  I love seeing light bulbs go off for people when they understand what to eat and why, and actually connect that to how they feel.  And then, when I test them to see what specific whole food supplements help them with that nagging "problem", we both see real improvement.  I work with people by appointment, one on one, to help make lasting changes in their health.  I am also available for (and love to do) group presentations.  Additional Training:  Nutritional Response Testing, BA-English/Journalism, Washington State teaching certificate 4th - 12th grades.
