Cilantro Pesto
- 1 bunch cilantro
- 2 cloves garlic
- 1/3 cup grated parmesan cheese
- 1/2 cup soaked walnuts or pecans
- 1/4 cup pine nuts
- 1 Tbsp mild vinegar (white or red wine vinegar)
- 1/3 to 1/2 cup healthy oil (I used mixture of olive and coconut)
Process in food processor. Use on steak, vegetables, with pasta, or on potatoes. May also be mixed with cream cheese or cottage cheese.
