Coconut & Wild Rice Egg Breakfast
- 5 Chicken eggs or 4 large Duck eggs
- 1/2 cup shredded dried coconut
- 2 1/2 tablespoons grass fed butter
- 1 tablespoon coconut oil
- 1/2 cup cooked wild rice
- Sea Salt and Pepper to taste
Put a skillet on low heat, add butter and coconut oil. When melted, add dried coconut and wild rice, let simmer. Next, add eggs, salt and pepper and mix well. Cook until done. Serve with cultured vegetables!
